El ingrediente que da sabor a esta receta es <em><strong>la bottarga<\/strong><\/em>, un salaz\u00f3n que se hace con las huevas de m\u00fajol, aunque tambi\u00e9n puede ser de huevas de at\u00fan.<\/p>\n<p><em>Malloreddus<\/em> o <em>spaguettini<\/em> es la pasta m\u00e1s usada para la <em>salsa alla bottarga<\/em>, pero esta vez, como hemos hecho pasta fresca al huevo, <strong>vamos a cortar unos <em>tonnarelli<\/em><\/strong>, una variedad de pasta conocida tambi\u00e9n como <em>maccheroni alla chitarra<\/em> y muy popular en la parte central de Italia.<\/p>\n<p>Los <em>tonnarelli<\/em> se caracterizan por ser <strong>finos y de secci\u00f3n cuadrada<\/strong>, es decir, que tienen las mismas dimensiones en todos sus lados, que puede oscilar entre dos y tres mil\u00edmetros. Tradicionalmente se extiende con rodillo y se corta con una especie de guitarra, de ah\u00ed el nombre \u00abchitarra\u00bb.<\/p>\n<p>Nosotros vamos a usar <strong><a href=\"\/maquinas-para-hacer-pasta\/1334-maquina-para-hacer-pasta-marcato-atlas-150-wellness.html\" target=\"_blank\" rel=\"noopener noreferrer\">una m\u00e1quina de pasta<\/a> para estirarla y para cortarla<\/strong> as\u00ed que no os preocup\u00e9is, es m\u00e1s f\u00e1cil de lo que parece y esta fant\u00e1stica m\u00e1quina har\u00e1 el trabajo por nosotros.
